The Air Fryer Haitian Griot recipe is my variation of a well known Haitian dish. Griot is an authentic Haitian dish, made up of cubed pork shoulder or turkey, cooked in a spicy, tangy sauce called Epis.

Ingredients
7lbs.pork shoulder, cut into medium cubes
2limes
1-2cupsEpis
2tbspminced garlic
2sprigsfresh thyme, plus extra leaves for serving
1tsptomato paste
kosher salt and freshly ground black pepper
Instructions
Juice limes and set juice aside. Place pork in a large bowl and rinse in cold water. Drain excess water and add lime juice, salt, black pepper, minced garlic and Epis and mix thoroughly.
Cover with plastic wrap and place in fridge for 1 hour.
Cook pork in a large pot on medium heat for 30-40 minutes and stir occasionally.
Preheat the air fryer to 400 degrees for 5 minutes.
Place the pork in the air fryer (do not over crowd). Cook for 8-12 minutes depending on your air fryer.
Insert meat thermometer into meat to ensure that the temperature is 165ºF before taking it out of the fryer.
Sauce
Take 2 cups of the excess juices made from cooking the pork and put in a medium sized sauce pot.
Add 1 tsp of tomato paste and whisk to evenly distribute the tomato paste. Add salt and pepper to taste.
