Honey Sriracha Chicken with Soy Sauce

Ingredients

  • 6 chicken thighs - skin on and bone in
  • cup honey
  • 3 tbsp Sriracha sauce
  • ½ cup soy sauce
  • 1 1 medium onion , chopped
  • 2 tbsp fresh ginger , peeled and chopped
  • 3 cloves garlic , crushed
  • 2 scallions , chopped (set some aside for garnish)
  • 1 tbsp sesame seed oil
  • Kosher salt , to taste
  • ground black pepper , to taste

Instructions

  • Preheat your oven to 400F degrees.
  • Rinse chicken. Pat chicken thighs dry with paper towel and place the chicken into a bowl. Add honey, sriracha sauce and soy sauce. Then add onions, scallions, ginger and salt and black pepper then mix together and make sure all ingredients are well incorporated.
  • Cover the bowl with plastic wrap and marinade chicken for 30 minutes to 2 hours, if time allows, in the refrigerator. This step is optional.
  • Place the chicken thighs and all of the contents in the skillet skin-side up. Then put the skillet in the oven and bake for 30-35 mins until the chicken reaches an internal temperature at 165°F.
  • When the chicken is cooked, spoon some of the sauce over the top of each chicken thigh. Top with scallion before serving.

Notes

  • Serve with plain white or brown rice, Udon stir fry noodles or steamed vegetables.
  • For less heat add 3 tablespoons of Sriracha. For extra heat add 5 tablespoons of the Sriracha.
