- 2 medium-sized sweet potatoes, sliced
- 2-3 medium-size white potatoes, sliced
- 2 tbsp avocado oil
- ½ tsp salt
- freshly ground black pepper, to taste
Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
Scrub the sweet potatoes and slice them into 1/2-inch thick rounds. Try to make the slices as even as possible so they roast evenly.
In a small bowl, whisk together the avocado oil, salt, and black pepper.
Brush both sides of the sweet potato rounds with the seasoned oil mixture.
Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
Bake for 20-25 minutes, flipping the sweet potato rounds over once halfway through cooking, until they are tender and golden brown.
Remove the sweet potato medallions from the oven and let them cool for a few minutes.
Serve the sweet potato medallions hot, garnished with chopped fresh herbs if desired.
