Ingredients

  • 2 medium-sized sweet potatoes, sliced
  • 2-3 medium-size white potatoes, sliced
  • 2 tbsp avocado oil
  • ½ tsp salt
  • freshly ground black pepper, to taste

Instructions

  • Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
  • Scrub the sweet potatoes and slice them into 1/2-inch thick rounds. Try to make the slices as even as possible so they roast evenly.
  • In a small bowl, whisk together the avocado oil, salt, and black pepper.
  • Brush both sides of the sweet potato rounds with the seasoned oil mixture.
  • Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
