I grew up with this dish with out the soy sauce. My mom would make it as a super fast dinner. This is my rendition of the famous Keto Egg Roll in a Bowl. I love quick and easy cooking! And this is definitely a fast one. You can buy the coleslaw in a bag. I used ground turkey to make this one. You can use ground beef or pork, if you prefer. It’s uber easy and delicious.

When I was a kid, I used to spend lots of school vacations/holidays at my Haitian grandmother’s house. I loved watching her cook. She had a helper, but she was intently involved in every ingredient that was used in every dish. She would let me taste as she was preparing dishes and then she would ask me if it was good?!? “Miata, c’est bon?” And I would answer, “Oui, Grandmère, c’est trés bon”. She made me feel like the most important person in the world!

I love Haitian 🇭🇹 food and the fond memories that I have of cooking with my grandmother. I miss her so much 💔❤️.

Remember Emeril? 🤔 My mom and I used to watch his show all the time and we loved it when he said BAM! Well this chicken was like BAM! Because all the ingredients I needed were at the store and I wasn’t leaving the house. You know how that goes. You get home from work. You have a wonderful idea and then you lack the ingredients….but did I? 🤔 so here’s what I had on hand

Ingredients

Onions
Scallions
Garlic
Teriyaki sauce
Mirin
Cumin
Crushed red pepper flakes
Italian seasonings
Garlic powder
Sesame oil
Gochujang
Salt and pepper

I baked it on 425 for about 35-40 minutes. The top got a bit more broiling than I wanted, but the flavor was like BAM!! Amazing!

You know when you have something in mind to make and you start making it and realize you don’t have all the ingredients. 😜 Well that’s what happened here. This was supposed to be a sweet and spicy Gochujang Chicken Thigh Recipe, but I didn’t have all the ingredients 😔. Improvisation is my jam. The fam LOVED it. My husband said it tasted like heaven ☁️ 😳. I love him. My daughter had seconds. So I guess I’ll work on the recipe and put it up on www.loveofyum.com 😮‍💨 😅

Ingredients
7 chicken thighs
Cumin
Crushed red pepper flakes
Gochujang
Mirin
Garlic
Onions
Garlic powder
Scallions
Italian seasonings
Black pepper
Salt
Teriyaki sauce
Sesame oil

Roast (convection) on 450 30 minutes
I put it on broil for 3 minutes for color. (Maybe too much color 🤷🏽‍♀️).
