I wanted a simple broccoli salad recipe and most broccoli salads that I found had mayo, cheese and bacon. So I figured I would create a quick, easy broccoli salad to my taste. I always have ACV (apple cider vinegar with the mother) without mayo, cheese and bacon.
I love this chopped broccoli salad! It is easy, nutritious and so tasty. It has the right amount of freshness and crunch that will make your mouth happy with every bite. This salad ticks all the boxes. It’s potluck-friendly and packable side salad. It is great for meal preps. Can be served during any holiday or festive celebration.
How is this one different?
The original broccoli salad comes from the Amish where they add cheese and bacon. Even though that’s the standard and it all sounds delicious, it’s not as healthy as this chopped broccoli salad recipe. Some salads contain mayo, cheese, sugar and bacon. I felt that the other ingredients hide the delicious taste and crunch of the broccoli and the cabbage. I guess if you want some sweetness you are welcome to add shredded carrots, dried cranberries or raisins.

What if I don’t like my broccoli raw?
If you have a tough time eating raw broccoli you can always boil the broccoli in water for 2 minutes, drain and then immediately put the broccoli florets in an ice bath for 1 minute. This will stop them from cooking. Drain them before using.
Ingredients
Salad
- 1 lb broccoli floret, slice thin, then roughly chopped
- ½ cup red onion, finely sliced
- ¼ cup red cabbage, thinly sliced
- 5-6 cherry tomatoes, halved
- 2-4 tbsp apple cider vinegar
ACV Dressing
- ⅓ cup extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 clove medium garlic, pressed or minced
- sea salt, to taste
- black pepper, to taste
- cayenne pepper (optional)

- Add pepita seeds, shredded carrots, raisins if you wish
