The Mini Frittata with Sausage and Onions is one of my top choices for breakfast, lunch or anytime for that matter. This easy recipe is versatile and simple. Sometimes I use various types of vegetables depending on what is available. In this recipe I used sausage and onions.
- ¼ cup cup ground sausage,
- 2 eggs
- few sliced onions
- salt and pepper
- In a medium sized skillet over medium heat. Add olive oil, garlic, and onions. Whisk eggs and add salt and pepper to taste. Pour whisk eggs into the skillet. Cook and flip after 2-3 minutes. Let cook for 1-2 minutes and then plate and eat!
