The Black Beans and Rice is a delicious side to accompany your favorite meat or eaten alone for beans and rice lovers. It is an easy dish to make and its versatility speaks for itself because it can be served with pretty much anything.
Ingredients
- 1 can black beans
- 2 cups water
- ½ small onion , finely chopped
- 2 garlic cloves , minced
- 1 tsp cumin
- 1 tbsp cilantro , chopped
- 2 tsp Kosher salt
- ½ tsp black pepper
- ½ cup unsweetened coconut milk
- 2 cups Jasmine rice
- 2 tbsps extra virgin olive oil
- 1 tbsp Epis (optional)
Instructions
- In a large saucepan add olive oil, onions, garlic, Epis, cilantro, salt and pepper on medium heat. Add beans and coconut milk, water and stir in rice and bring to a simmer. Cover and simmer reduce heat to low and cook for 20-25 minutes. Fluff rice and serve
