Ingredients

  • 1 can black beans
  • 2 cups water
  • ½ small onion , finely chopped
  • 2 garlic cloves , minced
  • 1 tsp cumin
  • 1 tbsp cilantro , chopped
  • 2 tsp Kosher salt
  • ½ tsp black pepper
  • ½ cup unsweetened coconut milk
  • 2 cups Jasmine rice
  • 2 tbsps extra virgin olive oil
  • 1 tbsp Epis (optional)

Instructions

  • In a large saucepan add olive oil, onions, garlic, Epis, cilantro, salt and pepper on medium heat. Add beans and coconut milk, water and stir in rice and bring to a simmer. Cover and simmer reduce heat to low and cook for 20-25 minutes. Fluff rice and serve
